RECIPE: HEALTHY CHILLI

If you don't know, one of my 2018 goals is to get back into a healthy lifestyle and cook healthy dinners that keep me feeling fuller for longer. I love cooking but hate coming home from a long day at work and having to think about what to cook or it taking forever. The bonus about this chilli is it's healthy, quick and easy to make and great for meal prep. It tastes amazing too so keep reading to find out how I make it.



INGREDIENTS
Low calorie cooking spray
1 large red onion, finely chopped
2 garlic cloves, finely chopped
2 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
400g tin chopped tomatoes
1 level tbsp tomato purée
300ml beef stock
Salt and freshly ground black pepper
500g lean beef mince (5% fat or less)
200g can red kidney beans


METHOD
The first step is to spray a large pan with low calorie cooking spray and fry the onions on a low heat until they soften and turn a golden brown colour.

When the onions are ready, add the mince and cook for around 5 minutes before adding the garlic and spices and continue to stir occasionally for another 5 minutes. 

Next add the chopped tomatoes, tomato purée and stock and stir well. Bring it to the boil and then reduce the heat and simmer gently for 15 minutes. 
Season with salt and pepper and add the drained kidney beans to the mixture and continue to heat for a further 5 minutes before serving hot with vegetables and boiled rice if desired.
