RECIPE: ONE POT BEEF FAJITA PASTA

I've been wanting to make this recipe for so long and this week I've finally got round to it - and let me tell you, it's incredible!! I love pasta and cheese is my downfall so that's why I'm trying to eat better in 2018 and get fit. You're probably thinking to yourselves, "why is she eating pasta and cheese if she wants to loose weight?" Well the reason is because this dish is on slimming world and would you believe it ... it's syn free, so you can eat it until your hearts content!



INGREDIENTS:
3 tbsp oil
3 beef steaks, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
1 tsp salt
1 tsp pepper
1 tbsp chili powder
1 tbsp cumin
1 tbsp garlic powder
5 cups milk
4 cups penne pasta
1 cup cheese, grated

INSTRUCTIONS:

The first step is to get a large pan and heat the oil over a high heat  before adding the beef and leaving until cooked through. 

Once the beef is cooked add the sliced peppers and onions for a few minutes and then add the salt, pepper, chilli powder, cumin and garlic powder.

Add the penne along with the milk and continue to stir so the pasta doesn't stick. You need to cook the pasta for around 10 minutes or until the milk has reduced to a thick sauce. Then add the cheese and continue to mix until melted. 

Serve with a side salad or garlic bread.
